  • ½ baguette sliced
  • 2 tbsp olive oil
  • ¼ white onion diced
  • 2 garlic cloves chopped
  • 1 package cremini mushrooms chopped into bite-sized pieces
  • 1 handful spinach
  • 1 cup low-sodium beef broth
  • 2 tsp aged balsamic vinegar
  • 2 tbsp cottage cheese
  • 1 tsp fresh lemon juice
  • 1 wheel brie cheese
  • ½ cup Parmigiano Reggiano grated


  • 1 tsp unsalted butter
  • fresh thyme
  • fresh basil
  • chili flakes
  • salt
  • pepper


  • Preheat oven to 400℉ degrees. Arrange baguette slices in a single layer on a rimmed baking sheet. Brush the slices evenly with olive oil.
  • In a pan on low-medium heat add 1tbsp of EVOO, white onion, garlic, and spinach. Continue sautéing until the liquid is fully evaporated.
  • Deglaze your pan with low-sodium beef broth, aged balsamic vinegar, unsalted butter, fresh thyme, fresh basil, salt, pepper, & chili flakes.
  • On the side, blend together cottage cheese, lemon juice, salt and pepper. Once combined, add to the mushrooms and mix.
  • Top the toasted baguette with Brie cheese. Broil until melted (1-2 minutes).
  • Top with the baked brie baguette with the mushroom mixture. Top with fresh Parmigiano Reggiano and enjoy!
